The following week, they measured their blood levels and checked out their guts.
“To our great shock and surprise, we found no significant differences between the two breads on any of the parameters that we collected,” says Eran Segal, one of the study’s lead researchers.
Some people in the white bread group had a higher blood sugar level, while some in the sourdough group did.
While the findings are definitely interesting, the researchers admit that more testing needs to be done.
